CHEESY CHICKEN QUESADILLAS

Prep Time: 45 minutes 

 

INGREDIENTS

  • Chicken Breasts (1 package of 5)

  • Tortilla Bread

  • Marble Cheese (1 block – 450g)

  • Spinach (2 handfuls)

  • 1 Tomato

  • 1 Red Pepper (1/2 needed)

  • Scallions (2 bulbs) 

  • Garlic Powder

  • Scotch Bonnet Peppers

  • Seasoning Salt

  • Extra Virgin Olive Oil

  • Black Pepper

Inside SuperMOM's Cheesy Chicken Quesadillas

For my picky-eaters, I only include seasoning, cheese, chicken and spinach.  The spinach dissolves in the food, so your little ones won’t be able to tell their eating a healthy meal.

  • Sage

  • Soy Sauce

  • Ketchup

  • Sour Cream

PREPARATION:

STEP 1:

Wash your Chicken Breasts thoroughly with Lemon Juice and water.

STEP 2:

Slice your Chicken Breasts into small portions (they do not have to be equal portions).

STEP 3:

In a frying pan, add Extra Virgin Olive Oil, turn the burner between medium and high heat, and wait about 2 minutes for the pan to get hot.

STEP 4:

Add the sliced chicken breasts, 2 pinches of Black Pepper, 3 pinches of All Purpose Seasoning, a generous sprinkle of Garlic Powder, 5 upside-down shakes of Soy Sauce (I prefer the one with 30% less sodium), and a pinch of Sage to the pan and mix.

 

STEP 5:

Wash your Red Pepper, Tomato, Scotch Bonnet Peppers, Spinach and Scallions.

STEP 6:

Cut your Red Pepper in half and dice. 

STEP 7:

Dice your Tomato and 2 bulbs of Scallions.

 

STEP 8:

Dice 1/8 each of a Red and Orange Scotch Bonnet Pepper.

STEP 9:

Break your Spinach in half.

STEP 9:

Grater 1 block of Marble Cheese.

 

STEP 10:

Cooking for Kids: After about 20 minutes, add your diced Tomato and Spinach in the pan and mix.

Cooking for Adults: After about 20 minutes, add your diced Tomato, Spinach, Red Pepper, Scotch Bonnet Peppers and Scallions to the pan and mix.

STEP 11:

Take your Tortilla Bread out of the package and place them separately in plates.

STEP 12:

Add cheese to half of each tortilla bread.

STEP 13:

After about 15 minutes from adding your vegetables to the pan and mixing occasionally (and adding water as needed), turn the burner off and add the chicken to the tortilla bread with cheese.

 

STEP 14:

Sprinkle some more cheese on top (if you’re a cheese lover!)

STEP 15:

Fold the side that does not have any cheese or chicken over and put in a toaster oven or microwave until the cheese starts to melt.

STEP 16:

Take your Chicken Quesadillas out and cut into 4 parts.  

STEP 17:

Add your dipping sauce. – Ketchup for the Kids and Sour Cream for the Parents!

STEP 18:

Serve! 

Quick Tips:

Wash all of your vegetables before you pack them away in your fridge after purchase.  This will save a lot of prep time during the week.

 

Plan your meals ahead of time.  I usually wash and season all my meat on Sunday in order to maximize the time I can spend with my family during the week, instead of preparing meals everyday.  The meal I know I will be making the following day stays in the fridge (which is great for locking in more flavour), and the rest of the seasoned meat gets stored in the freezer.

 

Always make extra because this is also a great lunch idea for the kids!
